This carefully selected lot is crafted from a trio of Castillo and Caturra varietals, each cherry picked at peak ripeness for maximum expression. The process is daring yet precise: a gentle 24-hour pre-fermentation followed by five days of anaerobic co-fermentation with dehydrated grapes.
